01 Our Story

We don't hide steak behind sauce. We put it on the fire.

Cinder opened in 2019 in an old Pike Street garage with one idea: a great steak needs good beef, patience and a real fire. Nothing else.

We buy whole animals from six ranches across Washington and Oregon. We break them down in house, dry-age them in our salt-block room, and cook every cut over a wood fire we light at noon and feed all night.

02 The Fire

Elias spent ten years at wood-fired grills in Buenos Aires and the Basque Country. Then he came home to Seattle to cook the Northwest's best beef the same way.

He's at the hearth every night. If you sit at the counter, he'll probably hand you something to try.

Tables open 30 days ahead and weekends go fast. We hold every table for 15 minutes.
